A real torpedo evasion manouever is something like this:
Flank speed, one weapon from ownship down the incoming line of bearing. Simultaneously launch one OTS sonobuoy to maintain contact with the torp. Reverse course away from the incoming threat, turning toward your own wake. DO NOT CROSS YOUR WAKE. OTS countermeaseures at your discretion, but don't get too crazy with them as you need to maintain some sort of acoustic picture.
As you approach your wake, turn 90* away from it and the torpedo, and make 90* zig zags at semi-regular intervals till the end of the torpedo's run time, or until you hear it has abrupted out. Your zig zag course should be away from the incoming torpedo bearing.
That's a dual-purpose type of evasion, to deal with wakehomers and conventioanl passive homers, and even wireguides, as the rapid course changes mess up the bad guy's TMA. It's worked in-game for me, but it's not foolproof.
Obviously it's pretty involved, and as soon as you start doing that sort of thing you've pretty much removed yourself from the fight because you are 98% defensive (2% offensive due to the snapshot), which is never a good thing in sub vs. ship.
A note on Nixie - it is of no use against wakehomers, which is what most FSU boats will shoot at you. It's a passive decoy, while wakehomers use active (albeit very high frequency) homing.
